Sweet Coffee Cake

Ingredients:

- 2 cups all-purpose flour

- 1 cup granulated sugar

- 1 teaspoon baking powder

- 1/2 cup unsalted butter, softened

- 1 cup sour cream

- 2 large eggs

- 2 teaspoons vanilla extract

 

For the streusel topping:

- 1/2 cup all-purpose flour

- 1/2 cup granulated sugar

- 1 teaspoon ground cinnamon

- 1/4 cup unsalted butter, softened

 

For the glaze:

- 1 cup powdered sugar

- 2 tablespoons milk

- 1/2 teaspoon vanilla extract

 

Instructions:

1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

3. Add the softened butter, sour cream, eggs, and vanilla extract to the dry ingredients. Mix well until the batter is smooth and well combined.

4. In a separate bowl, prepare the streusel topping by combining the flour, sugar, cinnamon, and softened butter. Use your fingers or a fork to mix until crumbly.

5. Pour half of the cake batter into the prepared cake pan. Sprinkle half of the streusel topping evenly over the batter. Repeat with the remaining batter and streusel.

6. Bake for approximately 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

7. While the cake is cooling, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.

8. Once the cake has cooled for about 10 minutes, drizzle the glaze over the top.
